What makes Heartwood Maple syrup unique

  • We gather entirely with buckets.

  • We boil over a wood fire, the most sustainable and local fuel source, and one of the reasons our syrup taste so good.

  • We don't use reverse osmosis (RO) to concentrate sugars. Instead, our sap is slowly caramelized, resulting in a more genuine flavor.

  • We can directly from the evaporator into glass while our syrup is still hot. Our syrup never sits in plastic lines nor is it stored in plastic drums.

  • Making syrup in this tradition, at this scale, is a dying art and a means of production we're happy to preserve.
