What makes Heartwood Maple syrup unique
We gather entirely with buckets.
We boil over a wood fire, the most sustainable and local fuel source, and one of the reasons our syrup taste so good.
We don't use reverse osmosis (RO) to concentrate sugars. Instead, our sap is slowly caramelized, resulting in a more genuine flavor.
We can directly from the evaporator into glass while our syrup is still hot. Our syrup never sits in plastic lines nor is it stored in plastic drums.
Making syrup in this tradition, at this scale, is a dying art and a means of production we're happy to preserve.
